FIELD: food industry.

SUBSTANCE: method for separating and/or dividing components is proposed in vegetable raw materials containing proteins and carbohydrates, and/or aromatic substances, and/or coloring substances, and/or fats, and/or, optionally, toxins, water-soluble and undissolved compounds containing starch, solids containing cellulose-based fibers and/or lignin-rich shells that are in a compacted form, protein-containing biogenic raw materials. (1) Protein-containing biogenic raw materials are prepared. (2a) Raw materials are mixed with an aqueous solution with pH from 7.5 to 13.5, containing at least one dissolved cationic amino acid with a molecular weight of less than 400 g/mol, having water solubility of at least 35 g/l at 20°C, and/ or at least one peptide containing cationic amino acid, until components of protein-containing biogenic raw materials are completely impregnated, and hydrated soluble compounds and solids are obtained. (2b) An aqueous distribution volume is added to them in a weight ratio of aqueous distribution volume : dry weight of protein-containing biogenic raw materials from 5:1 to 500:1 and mixed to obtain a distribution mixture of components to obtain dissolved soluble compounds and decompressed solids. (3) Decompressed solids and, optionally, undissolved water-soluble compounds are isolated from the distribution mixture to obtain an aqueous solution of water-soluble and dissolved compounds without solids. (4) Aggregating substances containing an aqueous solution containing at least one organic acid are added, and water-soluble and dissolved compounds containing proteins and/or carbohydrates of the aqueous solution are aggregated until a suspension of aggregated compounds containing proteins and/or carbohydrates and an aqueous phase containing non-aggregated, water-soluble and dissolved compounds are obtained. (5) The suspension is separated, and aggregated compounds are dehydrated by removing water, and dehydrated aggregated compounds and clarified aqueous phase are obtained, and, optionally, the clarified aqueous phase is purified. (6) The clarified aqueous phase from the stage (5) is added as an aqueous solution to the stage (2a) and/or as an aqueous distribution volume to the stage (2b), or to clean separated solids from the stage (3). During the process, the pH value of aqueous solutions does not fall below 5, and there is no coagulation or precipitation of proteins.

EFFECT: invention provides separation/division of components of vegetable raw materials, from which dissolved and solid components can be separated at technological stages and extracted in pure form, with the simultaneous removal of undesirable or particularly useful organic and/or inorganic compounds, the development of a method for extracting protein fractions that contain additional organic compounds originating from raw materials or added, resulting in improved properties of obtained combined products, the development of a method, which ensures the reuse of process fluids and compounds.
