FIELD: food industry.

SUBSTANCE: invention relates to the food industry, in particular the production of concentrates for soft drinks. The fruits of red currant, or black currant, or honeysuckle, or lingonberries, or a mixture thereof, water and sugar, taken in a ratio of 0.7:0.2:0.1, are loaded into an apparatus with a mechanoacoustic effect with an intensity of 100-500 W/kg of product, in which homogenization, pasteurization, sterilization and deodorization of raw materials are carried out. When the temperature of the mixture reaches 60°C, a dry mixture of thalli of Icelandic cetraria is introduced into the apparatus in the amount of 6-8 wt.% of the mass of the raw material, and processing is continued for 30 minutes at the same temperature. The resulting concentrate is poured into prepared containers, cooled, labeled, stored at a temperature not higher than plus 20±2°C in a place protected from sunlight for 12 months.

EFFECT: invention provides obtaining a concentrate based on fruit raw materials and a dry mixture of Icelandic cetraria thalli.
