FIELD: food industry.
SUBSTANCE: invention relates to the food industry, to methods for processing fruit raw materials using ultrasonic treatment to obtain confectionery. A method is proposed for obtaining a base from fruit raw materials for the production of confectionery products, involving the acceptance of fresh apple fruits with the addition of fresh or frozen honeysuckle fruits, or black currants, or red currants, or garden strawberries, or shadberries, sorting, washing, mixing, wiping, wherein the prepared mass from fruit raw materials, water and sugar in a ratio of 0.7:0.2:0.1 is subjected to ultrasonic treatment in a production line tank with constant circulation at a mechanical vibration frequency of 22 kHz and an ultrasonic exposure intensity of 50 W/cm2, until reaching temperature of the fruit mass 65-70°C, packaging, cooling, packaging, labeling and storage at an ambient temperature of not more than 20±2°C for up to 12 months.
EFFECT: invention makes it possible to obtain a product having a color and a flavor-aromatic bouquet characteristic of the raw materials used, characterized by unique structure-forming characteristics for further use in the production of confectionery products, with safety indicators during the entire period of product storage that meet food safety requirements.
