FIELD: biotechnology.
SUBSTANCE: invention relates to the field of biotechnology, in particular to the production of an enzyme preparation; it can be further used in the production of food products of weakly maturing variety of fish and in the production of raw dried products. The method includes grinding of raw materials, keeping, separation of a liquid fraction of the enzyme by centrifugation, preservation with sodium chloride. The insides of the walleye or bream are used as raw materials, which are kept at a hydraulic module of 1:1 for 5-5.5 h at a temperature of 38-43°C. The insides of the walleye are kept at pH of 2.5, and the insides of the bream are kept at pH of 9.5. During keeping, ultrasound treatment is carried out for 4-5 min with a frequency of 50 kHz, the resulting liquid enzyme preparation is defatted and preserved.
EFFECT: obtaining an enzyme preparation.
