SUBSTANCE: invention relates to biotechnology. The method for obtaining microbial protein from the microbial biomass of the producer of methane-oxidizing bacteria by the enzymatic method is carried out as follows. At the first stage, a concentrate of denuclearized biomass is obtained from native biomass in the form of a suspension of methane-oxidizing bacteria with a dry matter of 10-12%, the pH of which is adjusted to 3.0-3.5 with sulfuric acid concentration from 45 to 50%. It is heated with constant stirring with a multiplicity of circulation from 30 to 40 h-1 at a temperature of 75-85°C. The suspension is adjusted to a pH of 8.5 to 9.5 by adding an alkaline solution and maintaining a temperature of 85°C to 95°C. The suspension is kept for 1 to 2 hours until an alkaline extract is obtained, filtered on a filter with a pore diameter of 0.1-0.7 mcm at a pressure of 3-8 bar and washed with osmotic water up to 85-90% to remove nucleic components to obtain a denuclearized biomass concentrate (DNBM). At the second stage, the hydrolysis process is carried out, where the resulting concentrate is mixed in a reactor with a complex enzyme preparation including amylases, lipases and proteases at the rate of 30-35 g of concentrate dry matter per 7000 units. according to the amylase of a complex enzyme preparation. The suspension is kept at a temperature of 35-55°C and neutral pH with constant stirring with a circulation multiplicity of 30-40 h-1 until the stabilization of the protein concentration is achieved. At the third stage, the resulting suspension is inactivated by raising the temperature to 85-95°C for 30-60 minutes, followed by filtration on a filter with a pore diameter of 0.1-0.7 mcm under a pressure of 3-8 bar to obtain a concentrate of denuclearized biomass and a filtrate containing microbial protein. The concentrate and filtrate are dried until a powdered product is obtained.

EFFECT: invention provides an increase in the quality of microbial protein due to the purity of the resulting product by eliminating harmful impurities, with a high protein content of at least 88%.
