FIELD: microbiological industry. SUBSTANCE: method involves preparing the yeast aqueous suspension and addition of enzymes obtained from micromycetes strain VKPM F-683 or its cultural fluid followed by exposition for biomass hydrolysis at pH = 4.5-6.0. Live yeast cells were inactivated by heating to 70-95 C for 15-20 min. Hydrolyzate is pasteurized at 80-90 C for 15-20 min and dried. If necessary, insoluble substances were removed from hydrolyzate.
