FIELD: foodstuffs.
SUBSTANCE: invention relates to the food industry and food service establishments and can be used for producing sauces. Proposed is a dry mix for preparing a sauce, including powdered food ingredients, namely: skimmed powdered milk, soy protein, flavouring and stabilising components, wherein soy protein isolate is used as soy protein; cheese powder, maltodextrin, and dry yeast extract are used as flavouring components; dried egg whites, highly esterified apple pectin, premium wheat flour, and modified corn starch E1422 are used as stabilising components, wherein in order to produce the mix, each ingredient is loaded into a separate raw material container, then transferred consecutively to a hopper equipped with a vertical mechanical stirrer, and mixed for 10 to 12 minutes at a speed of 600 to 700 rpm, wherein the ingredients of the recipe are taken in the following ratio, % wt.: skimmed powdered milk 30 to 40; premium wheat flour 12 to 17; cheese powder 13 to 15; dried egg whites 8 to 12; maltodextrin 9 to 11; soy protein isolate 5 to 6; highly esterified apple pectin 4.5 to 5.5; modified corn starch E1422 4 to 6; dry yeast extract 0.9 to 1.1.
EFFECT: possibility of producing a finished sauce with high biological value, a homogeneous gel structure, pleasant taste and scent, when mixing the dry mix with water.
