SUBSTANCE: composition for the production of a fermented milk product for elderly nutrition includes cow milk, a starter culture containing Streptococcus thermophilus and Lactobacillus delbrueckii, bulgaricus subspecies, and B. bifidum, and/or B. longum, and/or B. adolescentis, phyto-components: a walnut leaf extract and/or a sophora japonica fruit extract, a biologically active food supplement – chlorella, starter cultures are introduced into the product, being immobilized in gel of biopolymers in a gelatin : starch : carrageenan system as 1:1:2.
EFFECT: composition has high organoleptic indicators, high functional properties, and high nutritional value.
