FIELD: food industry.
SUBSTANCE: invention relates to the field of the food industry, namely, to aseptic capping of glass jars of different sizes in home canning. Clamping apparatus for canning a product in a glass jar covered with a metal lid with a rubber gasket includes a clamping disk and a tool for securing the metal lid, made in the form of a screw whereon the clamping disk is secured. The clamping disk is configured to rest on the edges of the metal lid and has a gap therewith, said gap ensuring the bending of the metal lid during sterilisation. The apparatus also comprises a base for installing a jar with a product, and a bar with a screw and pins screwed thereto.
EFFECT: possibility of reliable fixation of the metal lid during sterilisation.
