FIELD: food industry.
SUBSTANCE: method for recycling of starch-containing potato waste for the production of a dry fodder product is characterized by that the mass of an upper layer of potato tubers is homogenized to a size of 1-2 mm and a dry matter content of 13-15%, is subjected to hydrolysis with a glucoamylase enzyme preparation at a concentration of 2.0-5.0 g/kg for 90 min at 60-65°C, which contributes to enrichment of a medium with glucose to 5.0% and active growth of yeast. Hydrolysate is enriched with mineral salts with a concentration, %: (NN4)2SO4 – 0.15, (NH4)2HPO4 – 0.5, MgSO4 – 0.1, ZnSO4 – 0.05. Yeast of Saccharomyces cerevisiae ZS strain is used as a protein producer. Seeding material is obtained by growing in a glucose-yeast medium with aeration during one day at 30°C, an introduction standard is 10-15% of the weight of the medium. Yeast is grown with aeration, with mixing at 250 rpm for 18-24 hours at a temperature of 28-30°C to a concentration of 5×108-1×109 KOE/g. Yeasted hydrolysate is subjected to drying on a roller dryer.
EFFECT: invention allows for obtainment of a dry fodder product.
