FIELD: food products.
SUBSTANCE: invention relates to whiteners for food products such as coffee and tea. A liquid whitener containing casein protein, pea protein, gellan gum, bicarbonate, citrate, oil and water is proposed. The casein protein is selected from the group consisting of caseinate, micellar casein and combinations thereof, the amount of casein protein is in the range of 0.7–1.4%, the amount of pea protein is in the range of 0.07–0.4%, the amount of gellan gum is in the range of 0.025–0.045%, the amount of bicarbonate is in the range of 0.07–0.15%, the amount of citrate is in the range of 0.18–0.24%, and the amount of oil is in the range of 6–12%, with all percentages representing a percentage by weight based on the liquid whitener, and wherein the liquid whitener contains less than 0.001% by weight of monoacylglycerols, diacylglycerols and diacetyltartaric acid esters of monoglycerides. A beverage containing a liquid whitener and a method of producing a liquid whitener are proposed. The whitener remains stable during shelf life and provides good organoleptic properties, and does not exhibit any physical instability when added to beverages.
EFFECT: liquid whitener additionally demonstrates high performance when added to beverages.
