FIELD: food products.
SUBSTANCE: invention relates to whiteners for food products such as coffee and tea. A liquid whitener containing casein protein, phospholipids, gellan gum, bicarbonate, citrate, oil and water is proposed. The casein protein is selected from the group consisting of caseinates, micellar casein, and combinations thereof; the amount of casein protein is in the range of 0.45–1.55%, the amount of phospholipids is in the range of 0.1–0.7%, the amount of gellan gum is in the range of 0.02–0.04%, the amount of bicarbonate is in the range of 0.07–0.15%, the amount of citrate is in the range of 0.12–0.24%, and the amount of oil is in the range of 6–16%, all percentages are the percentage by weight based on the liquid whitener, the liquid whitener has shelf life at least 6 months at 20°C or more. A beverage containing a liquid whitener and a method of producing a liquid whitener are proposed. The whitener remains stable during shelf life, provides good organoleptic properties, and does not exhibit any physical instability when added to beverages.
EFFECT: liquid whitener additionally demonstrates high performance when added to beverages.
