FIELD: food products.
SUBSTANCE: invention relates to whitening agents for food products such as coffee and tea. A liquid whitener containing casein protein, phospholipids, pectin, calcium, bicarbonate, citrate, oil and water is proposed. The amount of casein protein is in the range of 0.45–1.55%, the amount of phospholipids is in the range of 0.1–0.7%, the amount of pectin is in the range of 0.05–0.2%, the amount of calcium is in the range of 0.025– 0.075%, the amount of bicarbonate is in the range of 0.07–0.15%, the amount of citrate is in the range of 0.12–0.24%, the amount of oil is in the range of 6–16%, all percentages being mass percentage content based on liquid whitener. The casein protein is selected from the group consisting of caseinates, micellar casein and combinations thereof, the phospholipids are contained in sunflower lecithin or rapeseed lecithin, the pectin is low methoxylated pectin, and the oil is selected from the group consisting of coconut oil, high oleic canola oil, high oleic acid sunflower oil, high oleic acid soybean oil, high oleic acid safflower oil and combinations thereof. A beverage containing a liquid whitener and a method of producing a liquid whitener are proposed. The whitener remains stable during shelf life and provides good organoleptic properties without exhibiting physical instability when added to beverages.
EFFECT: liquid whitener additionally demonstrates high performance when added to beverages.
