FIELD: food industry.
SUBSTANCE: method for extracting protein from plant material consists in placing the plant material in electroactivated water with a pH of 8-14 in a ratio of such water to protein from 7:1 to 30:1 for 10-60 minutes at a temperature of 10-65°C, after which the liquid phase containing the protein is separated from the insoluble material, after which the protein in the liquid medium is precipitated with electroactivated water with a pH of 2-5 precipitation in a ratio of 3:1 to 10:1 from the initial volume of the liquid phase containing protein, within 5-60 minutes.
EFFECT: invention makes it possible to increase the yield of protein from plant material while reducing the number of technological operations.
