SUBSTANCE: cutting device (10) designed and made with the possibility of finally separating the fish fillet from the fish transported tailfirst in the transport direction T along the transport path and already having cuts along the belly and side parts. The device consists of a frame (11), a vehicle (13) driven by a drive element (12) and containing at least one receiving element (14) for processed fish, and a cutting assembly (15) containing two cutter heads (16, 17), each of which contains a drive disc cutter (18, 19). These two knife heads (16, 17) are located on opposite sides of the transport path so that the processed fish can move along the transport path between the disk cutters (18, 19) spaced apart from each other. To change the distance (B) between the disc knives (18, 19), the cutter heads (16, 17) are movably mounted on the frame (11), and the assembly (15) contains at least one sensitive element (20, 27), which is fixed to one of the movable cutter heads (16, 17). Each sensing element (20, 27) is located on the cutter head (16, 17) behind the cutting edges (Se) of the disc cutters (18, 19), when viewed in the transport direction T. The cutting edges are directed against the transport direction T, and the sensing element protrudes beyond the respective cutting edge (Se), when viewed in the direction transverse to the transport direction T, in the direction of the central axis (M) of the vehicle (13) and, accordingly, of the processed fish. The invention also relates to a corresponding method.
EFFECT: ensuring the final separation of the fish fillet from the spinal bone with the maximum yield of the product without the risk of incisions in the spinal bone.
