FIELD: food industry.
SUBSTANCE: invention relates to production of semi-finished meat products and can be used in meat processing plants. Chicken roll enriched with iodine comprises chicken meat and a filling with a vegetable component, whereas chicken breast previously injected with brine is used as chicken meat, and boiled chickpeas, sautéed onions, carrots and bell peppers are used as filling in the ratio of filling: meat 1:2. The brine is injected into raw meat in the amount of 20% by weight of the pieces. The initial components are used at the following ratio, wt.%: pre-injected chicken breast 80, onion 5, fresh carrots 5, bell peppers 5, chickpeas 5, and with the following composition of the injected brine, wt.%: drinking water 84.82, food supplement Iodosin in the form of a concentrate 0.5, nitrite salt 8, ground black pepper 0.18, phosphates 1.5, ground coriander 2.5, granulated garlic 2.5.
EFFECT: proposed chicken roll enriched with iodine has increased organoleptic properties, nutritional and biological value and expands the range of chicken rolls.
