FIELD: food industry.
SUBSTANCE: method for producing flour and fat from organic raw materials of animal origin, including the following operations: crushing frozen raw materials into pieces, grinding the pieces into minced meat, supplying minced meat to an electroplasmolyzer for preheating, squeezing the heated minced meat by a press or centrifuge method, where it is divided into a cake and water fat emulsion - broth; separating fat and residual solid particles from the water-fat emulsion; adding residual solids to the cake; feeding cake with added residual solids, as well as separately heated contact heat carrier – fat of animal or vegetable origin to the mixers of vacuum evaporators and mixing them there until a homogeneous mass – suspension; heat treatment, including drying, deodorization and disinfection of the suspension in vacuum evaporators until the cake moisture reaches 8-10%; separation of the suspension into greaves and contact heat carrier; adding an antioxidant to the greaves – producing flour; packaging flour in a container.
EFFECT: invention makes it possible to simplify the production of flour and fat, with high productivity and reduced energy consumption.
