Curd mass characterized by the fact that the curd base comprises low-fat cottage cheese, wolfberry berries, acai puree, chia seeds, blueberry jam, additional fructose or a mixture of fructose and cream are used as a filler, the product is prepared in the following ratios of components, kg per 1000 kg of finished product excluding losses: wolfberry berries 60-80; acai puree 25-75; chia seeds 20-30; blueberry jam 30-40; fructose 20-30; cream 0-150; low-fat cottage cheese up to 1000.
EFFECT: developing an enriched curd mass for gerodietetic nutrition, which has a balanced vitamin and mineral composition and preventive properties, which will expand the range of gerodietetic nutrition products.
