FIELD: food industry and public catering.
SUBSTANCE: invention can be used in the preparation of corn and sweet potato churek (unleavened bread). The following is proposed: a method of preparing corn and sweet potato churek, in which the sweet potato tubers are washed, peeled, boiled, kneaded to a puree, then corn flour, yacon flour, salt and Ossetian cheese are added, everything is mixed and, continuing to stir, hot water is gradually added until the dough becomes soft and homogeneous, then, after wetting the hands with water, chureks are formed, the top is greased with water so that the dough does not crack, and they are baked at a temperature of 180°C for 20–30 minutes until a golden crust appears, with the following ratio of components: 100 g of sweet potato tubers; 170 g of corn flour; 30 g of yacon flour; 5 g pf salt; 120 g of Ossetian cheese; 120 ml of hot water, yield is 5 pcs., weight of 1 churek is 110 g.
EFFECT: invention makes it possible to expand the range of products, to obtain a product containing a functional ingredient that makes it possible to diversify the menu of patients with diabetes requiring a healthy diet.
