SUBSTANCE: invention relates to post-harvest processing. The preparation for post-harvest processing of fruit and vegetables contains a complex of 1-methylcyclopropene with α-cyclodextrin, carbonate or bicarbonate of an alkali or alkaline earth metal and substances that help to increase the rate of release of 1-methylcyclopropene from the complex with α-cyclodextrin used as chelating complexing agents containing 1–15 wt.% in the preparation and polar amino acids containing 3–15 wt.% in the preparation. The preparation can be compressed into a tablet. The preparation also contains a mineral or organomineral pigment. The proposed preparation for post-harvest processing of fruit and vegetables ensures the release of 1-MCP into the atmosphere for up to 25–39 minutes.
