FIELD: food industry.

SUBSTANCE: invention relates to the field of food products, in particular jams, preserves, etc. The composition for preparing a food product is proposed, the said composition includes horseradish root, granulated sugar, drinking water, juice from horseradish root in the following ratio of components, wt.%: 12.58–14.09 of horseradish root; 25.16–28.18 of granulated sugar; 56.64–60.70 of drinking water; 1.26–1.41 of horseradish root juice. The proposed method of preparing a food product from the specified composition involves grinding horseradish root and placing it in a container. Then adding of 0.5 mass of granulated sugar and 0.5 mass of drinking water. Then the resulting mixture is heated at a temperature of 115–125°C and while stirring, the remaining mass of granulated sugar and drinking water is added. Then the resulting mixture is heated to boiling, the temperature is lowered to 100°C and the mixture is heated until it thickens and turns light brown. Then horseradish root juice is added and the mixture is stirred, then the temperature is raised to 115–125°C, the mixture is heated to boiling and held for 20–40 seconds, then the finished product is cooled to room temperature.

EFFECT: proposed group of inventions is aimed at reducing the labor intensity of the process of preparing a food product using the claimed method from the claimed composition, as well as increasing the shelf life of the product through the optimal ratio of the components of the composition and the method of preparing the product.
