FIELD: dairy industry.

SUBSTANCE: method for production of a condensed fermented milk product includes the following stages: (a) production of a milk product containing 0.05 wt % to 1.00 wt % of starch; (b) fermenting the milk product after adding the lactic acid bacteria to produce a fermented milk product; and (c) separating the fermented milk product by centrifugation to obtain separated liquid whey and a strained fermented milk product. Present invention also relates to use of starch to prevent plugging of separation device, used to produce expressed fermented milk product, where separation device is a centrifugal separator.

EFFECT: invention improves the separation stage and increases the amount of recovered serum, as well as increases the total protein content, providing approximation to the reference product (without starch) and obtaining a more stable product in terms of texture during storage life.
