FIELD: food industry.
SUBSTANCE: group of inventions refers to food industry. A composition contains titanium dioxide as a whitening agent in an amount of 0.05-1 wt % of a whitening composition, a stabilising system containing a mixture of microcrystalline cellulose (MCC), carboxymethyl cellulose (CMC) and a mixture of kappa and iota carrageenan in an amount sufficient for suspending the whitening agent in the fluid whitening composition and in an aqueous medium, wherein the fluid whitening composition is added. MCC/CMC mass ratio makes from 3:1 to 30:1, while total MCC and CMC makes from 0.1 to 1 wt % of the whitening composition. The mixture of kappa and iota carrageenan is found in an amount from 0.005 to 0.2 wt % of the whitening composition. The stabilising system supports the fluid whitening composition in the homogenous state for at least 9 months at room temperature. The stabilising system provides suspending the whitening composition in the aqueous medium. A beverage contains water, a component of the beverage (coffee, tea, chocolate, fruit beverage) and an adequate amount of the whitening composition. A method for preparing the whitening composition involves providing powdered titanium dioxide, mixed MCC, CMC and carrageenan in the declared amount, combining the prepared mixture in hot water at stirring, sterilising the mixture by exposure to ultrasound, homogenising, cooling the mixture and packaging in the aseptic environment.
EFFECT: group of inventions provides preparing the fat-free or low-fat storage-stable product possessing a good whitening ability, good shelf-life physical and chemical stability without peeling, sedimentation or taste perversion; the product has adequate viscosity, flavour, without phase separation when added to the beverages.
