FIELD: food industry.
SUBSTANCE: method of producing Turkish delight from pumpkin is proposed, according to which the raw materials are prepared and the pumpkin mass is prepared by boiling the pumpkin in water with a sweetener and lemon juice. The pumpkin mass is beaten with the simultaneous addition of a gelling agent, the mass is boiled with continuous stirring until a moisture content of 17–21% is obtained, the boiled jelly-like mass is moved away, layers of the mass are left for some time, then cut into individual products, and packaged. Agar-agar is used as a gelling agent, and white sugar or natural honey is used as a sweetener. The drying time takes 4–5 hours at a temperature of 20–22°C.
EFFECT: invention improves the nutritional value of the product.
