FIELD: food industry.
SUBSTANCE: disclosed is a method of fig production, according to which fruit and vegetable components are poured with boiling water, citric acid is added and the mixture is brought to the boil. Cooked fruit and vegetable components are passed; a sweetener and vanillin are added to the produced mass with further mixing of the mass and pouring onto a baking sheet. Then the mixture is cooked for 20–40 minutes and poured onto foil or parchment paper and dried. Fruit-and-vegetable components are represented by green tomatoes and hawthorn. When passing cooked tomatoes and hawthorn, a thickener is added to them. Erythrite is used as a sweetener, and sodium alginate is used as a thickener. After drying, the product is sprinkled with powder of dried hawthorn fruits.
EFFECT: invention is aimed at production of figs with increased nutritive value.
