FIELD: food industry.
SUBSTANCE: invention relates to the technology for producing protein isolate from plant raw materials. A method of obtaining protein isolate from pumpkin seeds is proposed. The method includes extraction of flour obtained from pumpkin seeds, precipitation, separation of the aqueous protein solution from the residual flour, separation of the protein micellar mass, followed by separation of the supernatant phase from it. An aqueous protein solution from residual pumpkin seed flour after extraction is treated in an electromagnetic field of extremely low frequencies (EMF) in the “wave swing” mode with a frequency range of 10–100 Hz for 15 minutes. At the first stage of processing, a protein precipitate with gelling properties is separated. At the second stage, the pH is reduced to 4 and a precipitate with foaming properties is separated. Then the resulting precipitate is washed with water three times, neutralized, and the washing water is separated using a centrifuge. The resulting protein paste is light cream in colour with a moisture content of 60–65% and a protein content per dry weight of 92–94%.
EFFECT: method allows to increase the yield of protein and improve its foaming properties.
