FIELD: food industry.
SUBSTANCE: invention relates to food industry. Protein isolate of oil flax seeds is suggested. Isolate is prepared by oil flax seed protein extraction from flour of oil flax seeds, concentration of aqueous solution of protein, attenuation of concentrated aqueous solution of protein with formation of protein micelle, protein micelle collection and drying of proteim micellar mass. Protein isolate can be extracted from supernatant, prepared with protein micelle formation. The content of protein is not less then 100 % of wt. (N ×6.25) in reliance on dry weight basis. The isolate has higher functional properties.
EFFECT: preparation of isolate from flax seeds having higher functional properties.
