FIELD: oil and fat industry.
SUBSTANCE: method of producing an oil extract of grape kernels, characterized by that it involves cleaning kernels from accompanying impurities, drying, grinding to fraction of 0.3÷0.4 mm, treatment with supercritical carbon dioxide at pressure of 250÷260 atm. and temperature of 50÷55 °C for 60 minutes, wherein extraction with carbon dioxide is carried out with addition of a mixture of ethanol and pentane in amount of 5 vol.% in ratio of 4:1, which is carried out by alternating static and dynamic modes with interval of 10 minutes for 60 minutes.
EFFECT: invention enables to obtain an oil extract of grape seeds with high output of fatty saturated and unsaturated acids, tocopherols, as well as polyphenols, and also significantly reduce the total consumption of carbon dioxide and cosolvents for the extraction process while maintaining high extraction efficiency.
