FIELD: food industry.
SUBSTANCE: invention relates to milk processing and cheese production equipment. Cheese vat-pasteurizer contains a bowl made in the form of permanently connected to each other external container equipped with an inlet valve and an outlet nozzle, and an internal container, between which there is a space filled with heat carrier in the form of water, a heater, a sensor for measuring temperature of the heat carrier, as well as mounted on bracket geared motor with mixer, cover, processed product temperature measuring sensor, control unit with software installed in it, wherein temperature measurement sensors, inlet valve, heater, geared motor are connected to control unit, characterized in that the heater is installed in the tray welded to the bowl from below; control unit is placed on a bracket separate from the geared motor; processed product temperature measuring sensor is made submersible with attachment both in the bowl cover and on the bowl edge; cheese vat is made with possibility of installation of mixers of different types in it and possibility of their quick-detachable connection with geared motor; bowl is installed on a stable base made with possibility of bowl inclination; edge of the bowl is made with a smooth mechanically formed bend of the edge connecting the surface of the inner container with the surface of the outer container; product drain hole is located at the junction of the horizontal and vertical walls of the inner container of the bowl; cheese vat-pasteurizer additionally comprises a divider of ascending flows of a hot heat carrier, made in the form of a plate with a hole, installed at the bottom of the inner container of the bowl above the heating element, circulating pump circulating heat carrier in time of its heating and cooling, product flow divider is installed in the inner vessel of the bowl and is made in the form of a blade fixed between the axis of the mixer and the wall of the inner vessel.
EFFECT: invention enables to provide uniform and fast heating and cooling of the processed product, the possibility of accurate measurement of the temperature of the processed product throughout the thickness of its layer, reliable operation of the control unit, increase efficiency of processing and quality of the obtained product, operational capabilities during operation and maintenance of the cheese vat.
