FIELD: food industry.
SUBSTANCE: invention relates to the food industry and discloses a method of producing lycopene, comprising mixing a lycopene-containing concentrate of carotenoids in oil with a complex solvent consisting of hexane and ethanol to obtain a solution, cooling the solution for crystallisation of lycopene and holding it to obtain a precipitate, separating the precipitate by filtration, washing the precipitate with an aqueous solution of ethanol and drying the washed precipitate under vacuum, wherein in the complex solvent the volume ratio of hexane and ethanol ranges from 1.0:1.0 to 1.0:1.5, mixing is carried out at a ratio (w/v) of the lycopene-containing concentrate of carotenoids in oil and the complex solvent equal to from 1:2 to 1:3, by ultrasonic treatment with specific power from 0.28 to 0.30 W/cm3 for 3 to 5 minutes at temperature from 20 to 25 °C, solution is cooled to temperature from 10 to 12 °C and held for 3 to 4 hours, precipitate is separated by filtration under vacuum, washed with aqueous solution of ethanol with concentration of 70–75% at ratio (w/v) of precipitate and aqueous solution of ethanol from 1:3 to 1:4 and dried under vacuum.
EFFECT: high yield of high-quality lycopene.
