FIELD: food industry.
SUBSTANCE: invention is intended for use in food industry to prepare high protein food concentrates and protein products with functional purpose. In order to prepare food protein products and protein concentrates, raw materials hydrolysis is carried out by ferment preparation Protamex with activity 400 PE/g in amount of 0.1-0.2% from mass of crushed raw materials. As raw materials, hydrobionts are used or waste of their recycling. Taste additives and spices may be added into protein product or protein concentrate.
EFFECT: preparation of food protein product with thick uniform structure from whitish to cream colour with pleasant smell and meat flavour, without bitterness.
