FIELD: meat processing.
SUBSTANCE: invention relates to poultry processing industry. Composition for treating poultry carcasses includes an aqueous solution of sodium lactate, lactic acid and propionic acid, wherein additionally contains cetylpyridinium chloride in following ratio of components, wt.%: sodium lactate 19.0–24.0, lactic acid 8.0–11.0, propionic acid 0.4–0.5, cetylpyridinium chloride 16–24, water – the rest.
EFFECT: invention increases efficiency of the composition in terms of increasing the duration of storage of poultry carcasses.
