FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in production of meat and vegetable chopped semi-products. Proposed is a semi-finished chopped meat-and-vegetable product with ostrich meat containing ostrich meat, chicken fillet, fresh peeled onions, fresh peeled garlic, food salt, drinking water, which additionally contains quinoa grits prepared by soaking in water at ratio of 1:2 for 1 hour, and then boiled in water at ratio of 1:2 for 10 minutes, with addition of CO2-extract of allspice at the following ratio of initial components, wt.%: ostrich meat 55.0; chicken fillet 25.0; peeled fresh onions 8.0; quinoa grits 8.0; fresh peeled garlic 0.9; CO2-extract of allspice 0.01; food salt 2.0; drinking water 1.09.
EFFECT: invention ensures production of a meat-and-vegetable semi-product with improved organoleptic characteristics and increased biological value.
