FIELD: food industry.
SUBSTANCE: method of producing blend of vegetable oils for women over 75 years old, characterized by the fact that for blending one uses a mixture of vegetable oils of holy thistle, camelina, sunflower, mustard, taken at ratio of 64.3:27.6:5:3.1, at which the ratio of fatty acids omega-3: omega-6: omega-9 = 1:5:1, wherein for production of oils seeds are pre-cleaned from impurities, subjected to heat and moisture treatment, then seeds are supplied for prepressing at temperature of 50–60 °C, then squeezed oil is subjected to purification, filtration, then the obtained components of the blend of vegetable oils, namely holy thistle, camelina, sunflower, mustard, are dosed in portions, heated to temperature of 35–40 °C and mixed, then oil is supplied for deodorization and refining, then for bottling, wherein during bottling preliminary nitriding of blend of vegetable oils is used.
EFFECT: invention enables to optimize fatty acid composition and ratio of omega-3, omega-6 and omega-9 fatty acids, as well as to increase the biological value of the ready product, which is most adapted to the needs of the body of elderly women.
