FIELD: biotechnology.
SUBSTANCE: invention represents a method of encapsulating rutin in plasmolyzed yeast, where yeast is first mixed with 10 wt.% NaCl solution in ratio of 1:20, then the mixture is placed on a magnetic stirrer and plasmolysis of yeast is carried out, while stirring said mixture for 24 hours at 55 °C, plasmolyzed yeast is centrifuged at 2,000 rpm for 10 minutes, obtained precipitate is washed three times with distilled water to remove NaCl, then this precipitate is added to prepared 1 wt.% aqueous mixture of rutin, with a weight ratio of rutin : yeast of 1:5, obtained mixture is mechanically stirred in a temperature-controlled shaker at temperature of 400 °C and 100 rpm for 24 hours, then the mixture is centrifuged at 2,000 rpm for 10 minutes, obtained precipitate is lyophilized at a temperature in the range of -50 °C to -60 °C and pressure of 1–3 Pa to moisture weight fraction of not more than 5%.
EFFECT: invention widens the range of methods for producing food substances and products with high bioactive properties preserved during use thereof.
