FIELD: food industry.
SUBSTANCE: disclosed is a steviol glycoside composition containing mixture of 70/30 rebaudioside D and rebaudioside M, as well as minor steviol glycosides rebaudioside N and rebaudioside O. Each of the minor glycosides is present in the steviol glycoside composition in an amount of less than 5% by weight of the composition. Also disclosed is a steviol glycoside composition containing minor steviol glycosides, wherein the minor steviol glycosides include glycosylated rebaudioside Q and glycosylated rebaudioside R.
EFFECT: invention is aimed at obtaining steviol glycoside compositions having improved profiles of sweetness and taste.
