FIELD: analytical chemistry.
SUBSTANCE: invention relates to analytical chemistry and specifically to methods of analysing food products, particularly wine, and can be used to assess quality and detect counterfeit products by determining the presence of synthetic dyes. Disclosed is a method for determining water-soluble synthetic dyes in table red wine, which involves adding a sorbent to an initial sample of wine, which is 3-aminopropyl-silica gel, in amount of 0.5 g per 100 ml, mixing and subsequent separation of the sorbent and supernatant. Shade N and colour intensity I of the supernatant and the initial wine sample are measured. Presence of synthetic dyes is determined by formula , where N0 is the shade of the initial sample, N is the shade of the supernatant, I0 is the colour intensity of the initial sample, I is the colour intensity of the supernatant, 100 is conversion factor. At K>3, synthetic dyes are present.
EFFECT: invention provides a simple method of determining water-soluble synthetic dyes in wine and shorter analysis time.
