FIELD: chemistry.
SUBSTANCE: invention relates to use of one or more compounds of formula (I) as an ingredient for imparting, enhancing, improving or modifying the umami taste of a consumable composition. Also disclosed is a composition with an umami taste and aroma and a consumable composition having an umami taste comprising at least one compound of formula (I) or a composition with an umami flavour and aroma and a base product, as well as a method for preparing such a composition. Also disclosed is a compound of formula (I) in the form of any of the stereoisomers of the compound or a mixture thereof, provided that the compound is not (E)-N-(4-cinnamamidobutyl)-2-methyl but-2-enamide. In general formula (I) , X, Y=-NH- or -O-, and at least X or Y is -NH-; denotes a carbon-carbon single or double bond, wherein one carbon-carbon double bond is found either in C2 or C3, and the bond depicted in the form of a wavy line shows an unspecified configuration of the neighbouring double bond.
EFFECT: improved organic compounds or related to organic compounds are disclosed.
