FIELD: food industry.
SUBSTANCE: invention relates to analysis of quality of milk and milk products using optical means. Method for determining milk quality using a test strip involves recording the color change of three analytical zones and evaluating the concentration of the analyzed substance by reference color scales. As the main reagent of the first analytical zone for the quantitative determination of hydrogen peroxide in milk, titanium dioxide sol with pH 4.5 is used, which is obtained by a sol-gel method using acid peptization and subsequent dialysis purification for 36 hours, with further addition of glycerol to the titanium dioxide sol in a volume ratio of 1 to 14. For the quantitative determination of starch in milk according to the second analytical zone, the enzymes glucoamylase and glucose oxidase are added to the titanium dioxide sol, and for the quantitative determination of lactose by the third analytical zone, enzymes β-galactosidase and glucose oxidase are added to the sol. Analytical zones are obtained by applying the corresponding reagent in amount of 50 mcl on the area of the test strip with area of 20 mm2.
EFFECT: method using test strips based on titanium dioxide sol has improved analytical characteristics compared to previously known test strips and allows for rapid assessment of quality and safety of milk and dairy products with establishment of more accurate concentration of hydrogen peroxide, starch and lactose.
