FIELD: biotechnology.

SUBSTANCE: disclosed is a composite material for a device for quantitative estimation of starch content in liquids, which contains polymer matrix (4) based on bovine serum albumin, inclusion of carbon nanotubes and inclusion of a mixture of glucose oxidase and glucoamylase enzymes (3), immobilized in polymer matrix (4), wherein polymer matrix (4) contains bovine serum albumin covalently bonded with a redox-active compound in form of neutral red, inclusion of single-wall carbon nanotubes (2). Also disclosed is a device for quantitative estimation of content of starch in liquids, which comprises working electrode (1), surface of which is coated with composite material in accordance with present invention. Invention can be used for quantitative evaluation of starch content in liquids, specifically samples of fermentation and fermentation media, as well as liquid food products.

EFFECT: invention enables to reduce lower limit of range of determined concentrations of starch in liquids to 2 mg/dm3, as well as reduce relative deviation of series of measurements.
