FIELD: food industry.
SUBSTANCE: disclosed is a method of producing a beverage based on honey and coffee beans, characterized by the fact that grinding on a millstone coffee grinder for uniformity of coffee particles to a fine grinding state, thermal treatment in water from natural sources for 1 minute after grinding, with 100 ml of water taken from 8 to 12 g of ground coffee, from 0.4 to 0.6 g of food salt and the mixture is heated to temperature of 83–86 °C in 2.5–3 minutes, wherein at temperature of 38–42 °C honey is added to the composition in amount of 5–7 g per 100 ml, then the mixture is heated to temperature of 93–96 °C for 1.3–1.6 minutes, then 4–6 cycles of bringing to boiling and cooling to temperature of 96–97 °C. Also disclosed is a beverage based on honey and coffee beans, which includes thermally treated ground coffee as initial components, characterized by that per 100 ml of water it contains from 8 to 12 g of ground coffee and from 0.4 to 0.6 g of food salt, as well as from 5 to 7 g of honey.
EFFECT: invention ensures production of a beverage satisfying various taste preferences of consumers.
