FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of a granulated sugar-containing product is proposed, including the concentration of a sugar-containing solution and its application to the seed granules, the growth and drying of the product granules. As a seed, granules are used, consisting in equal amounts of sucrose and maltodextrin, obtained by agglomerating their powder form to a size of 0.65-1.3 mm. In the process of growth, a sugar-containing solution with a concentration of 80-85% of solids is applied to the seed granules, into which green tea extract and β-carotene are first introduced, and subjected to cavitation-cumulative treatment by feeding it at a speed of 10-15 m/s into a supercavitating static apparatus at a temperature of 95-105°С. The granules are increased to a size of 2.0-2.5 mm, after which maltitol syrup is sprayed onto the surface of the granules and dried to a moisture content of 0.2-0.3%.
EFFECT: invention makes it possible to obtain a sugar-containing product with high organoleptic and structural-mechanical properties, as well as high nutritional value.
