FIELD: biochemistry. SUBSTANCE: method may be used for production of alcohol from grain raw material. Proposed method includes grain cleaning, its grinding, preparation of kneading, cooking of starch mass, saccharification, yeast fermentation of wort, beer rectification and separation of prepared product. Grain and water for kneading are taken in ratio 1:2.5-3.5. Saccharification is conducted by mixture of at least one ferment and malt in ratio 0.2-0.8: 1 in amount of 5-12 mas.% of conventional starch. Yeast for malt fermentation is used in amount of 8-26 vol.%. EFFECT: improved consumer properties; broadened field of application. 6 cl, 1 tbl
