FIELD: food industry.
SUBSTANCE: invention relates to production of biologically active additives and functional food products. Method involves mixing crushed rosebay willowherb and an extractant in a weight-volume ratio of 1:11-30. Extractant used is a mixture of choline chloride, glycerol and water in molar ratio of 1:2:10-15. Extraction is carried out with ultrasonic action with power of 120 W with frequency of 40 kHz at temperature of 30-60 °C for 20-40 minutes. Obtained liquid extract of rosebay willowherb leaves contains 17.6-34.6 mg/g of flavonoids in terms of rutin.
EFFECT: invention enables to obtain a liquid extract of rosebay willowherb with a high content of flavonoids, as well as to reduce the duration of production.
