SUBSTANCE: invention relates to the food industry and public catering and can be used in the preparation of flour products using sweet potato tubers. To prepare the pie, the highest grade wheat flour and yacon flour are sifted into the prepared container, vegetable oil, warm milk, salt, sugar and yeast are added and the dough is kneaded. The container with the dough is covered with a lid and left in a warm place for 1.5-2.5 hours. To prepare the filling, sweet potato tubers are rubbed on a coarse grater, the onion is finely chopped and fried in oil. Then fried onions, salt, pepper are added to the sweet potato and mixed. The dough is rolled out with a thickness of 1 cm, the filling is placed in the middle, leveled with a thin layer and collected. The edges are connected in the middle, the surface of the cake is leveled, turned over to the other side and the surface is also leveled until a round even thickness is obtained. The pie is placed in the pan with the seam down, a hole is made on top, baked in the oven for 6-7 minutes at a temperature of 270°C, first on the bottom shelf for 4 minutes, then baked on the top. The finished cake is smeared with butter. In this case, the following ingredients are used: for the dough: milk - 150 ml, salt - 2 g, sugar - 2 g, yeast - 5 g, premium wheat flour - 200 g, yacon flour - 50 g, vegetable oil - 25 ml; for the filling: sweet potato - 400 g, onion - 100 g, salt, pepper - to taste, vegetable oil - 25 ml and additionally butter - 20 g.

EFFECT: invention allows expanding the range of manufactured products, as well as obtaining a product enriched with inulin.
