FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for preparation of Ossetian pie with a filling involves kneading dough on water, with addition of hydrated inulin and pressed yeast, preparation of filling of Ossetian cheese and leaves of quinoa, formation of pie baking at temperature 300–320 °C for 4–6 minutes and lubrication of the ready product with melted butter. Product is prepared at the following weight ratio: wheat flour – 230, hydrated inuline – 30, water – 130, pressed yeast – 7, Ossetian cheese – 200, quinoa leaves – 190 and butter – 15.
EFFECT: invention allows expanding the range of flour products with increased taste indices and nutritive value, as well as enriching the composition with food fibers.
