FIELD: food industry.

SUBSTANCE: method extraction of lipid containing polyunsaturated fatty acids (PUFA) from biomass, involving the following stages: a) providing a biomass suspension containing cells which contain a lipid containing PUFA; b) lysis of biomass cells, at least partially; c) concentrating the suspension to a total dry matter (TDM) of 20 wt.% to 60 wt.%, if suspension is characterized by lower content of TDM; d) temperature control in suspension from 20 °C to 100 °C; e) maintaining the temperature in the range specified in (d) for at least 0.5 hour while adding 7.5 mol to 25 mol of the base equivalent to 10 kg of the total dry substance contained in the suspension; f) adjusting the pH value from 5.0 to 8.5 and incubating for period of 0.1 to 6 hours; g) separating the oil-containing light phase from the water-containing salt, remaining oil and cell debris of the heavy phase by centrifugation. Oil is added to the suspension after step (b), but before step (g), as a result of which the ratio of oil and total dry matter (TDM) reaches a value of at least 0.5. Method of extracting lipid containing polyunsaturated fatty acids (PUFA) from biomass, involving the following stages: a) fermenting the PUFA-producing cells until the ratio of oil to total dry matter (TDM) in the fermentation broth reaches a value of at least 0.5; b) lysis of biomass cells, at least partially; c) concentrating the suspension to a total dry matter (TDM) of 20 wt.% to 60 wt.%, if suspension is characterized by lower content of TDM; d) temperature control in suspension from 20 °C to 100 °C; e) maintaining the temperature in the range specified in (d) for at least 0.5 hour while adding total of 7.5 moles to 25 moles of the base equivalent to 10 kg of the total dry substance contained in the suspension; f) adjusting the pH value from 5.0 to 8.5 and incubating for period of 0.1 to 6 hours; g) separating the oil-containing light phase from the water-containing salt, remaining oil and cell debris of the heavy phase by centrifugation.

EFFECT: disclosed is a method of extracting lipids from lipid-containing biomass.
