FIELD: oil and fat-making industry. SUBSTANCE: as a hydrating agent there is used a 0.2-3.5 % aqueous succinic acid solution in the amount determined by weight phospholipide-reagent ratio of 1: 1-1: 2.5 in crude vegetable oil, and after separation of the mixture there is obtained hydrated oil and phospholipide residue which is then evaporated.
