FIELD: plant material processing. SUBSTANCE: oil is hydrated. In unrefined vegetable oil mixing an aqueous solution of citric and succinic acids is used at mass part of citric acid 0.025-0.07% and mass part of succinic acid 0.015-0.05%. Amount of this solution is 0.05-0.10% to the oil mass. Then phospholipid emulsion is separated from hydrated oil and both products are dried.
