SUBSTANCE: invention relates to the fat and oil industry. Method of producing hydrated vegetable oil and lecithin involves mixing unrefined vegetable oil with an aqueous solution of a hydrating agent containing citric acid in amount of 0.1–0.2 % and malic acid in amount of 0.5–1.5 %, exposition of obtained mixture, separation of formed phospholipid emulsion from hydrated oil, drying the phospholipid emulsion and drying the hydrated oil, wherein the amount of the hydrating agent is 1.75–6.5 % of the unrefined vegetable oil weight.

EFFECT: invention enables to create an efficient method of producing hydrated vegetable oil and lecithin, which ensures high quality and stability to oxidation of the obtained products.
